We chose to close the Summer season with a chef that we proudly call one of our OG's. Over the years we have seen him grow, personally and professionally, through COVID closures and climactic changes. He remains, to this day, one of our all-time favorites.
Dewi has always had that X factor. He's not out for fame nor notoriety. He simply wants to work with what his region gives him and plate is heart every time. For every guest. We've asked Dewi to come to Amsterdam from his beloved Texel, a Dutch island rich in nature and wildlife. A territory that many know for its purity.
